The head chef and restaurateur Tim Mälzer owns several restaurants in Hamburg – until the corona pandemic forced him to close them. But now things are looking good for him as he reopens his famous “bullerei” and relies on a revised concept.
At the beginning of the Corona crisis, Tim Mälzer had to close his otherwise well-run restaurants. In Markus Lanz’s talk show, the man from Hamburg spoke about the predicament and held back tears. He became the spokesman for all restaurateurs and successfully campaigned for tax breaks and government subsidies. Now the 49-year-old has every reason to laugh again. Next weekend he will open his most famous boutique, the “Bullerei” in the Schanzenviertel, with a new look.
Mälzer now presents it on his Instagram account with several photos. He enthusiastically writes: “To make sure everything goes well when our new store opens on October 3, 2020, we’re running a test today with a small group of friends and families. Process review. Technology test and, and, and. So far everything is going well and we can confirm one thing: The new old “Bullerei” has turned into something spectacular. “”
The “V word” in sausage products
The Bullerei has been located in Lagerstraße since 2009. The shop has been closed since April. However, this closure was planned well in advance and in no way attributable to the Corona. The “bullerei” must be visually updated. Only its other companies, including the catering company Lebensmittelwerft, were directly affected by the crisis.
The renovation process is now complete and not only the furniture has been completely redesigned, but also the meat-rich menu. The restaurant also includes the delicatessen shop “The Black Sheep”. Only vegetarian and vegan dishes are offered here. Even if Mälzer doesn’t want to use the “V-word” himself, as he explains in an interview with “Welt”: “Because we want to make it clear that we don’t offer a kitchen that has to happen, but also purely vegetarian dishes, some of which are purely vegetable , are a great pleasure. “”
There, as well as in the “Bullerei”, Mälzer must of course adhere to a special hygiene concept, which also includes Plexiglas cutting discs. Only half of the 140 places in the “Bullerei” can be filled, so that a spontaneous visit without a long-term reservation is hardly possible.
